Lamb, Hogget & Mutton
Sheep are named differently depending on their age:
- Lambs: Up to a year
- Hoggets: 1-2 Years
- Mutton: 2 upwards.
Lamb meat is light and delicate in favour and is available from Bere Mill between July-March.
Darker in colour and richer in flavor than new season lamb. Hogget provides high-quality protein and contains every essential amino acid the body needs, along with high levels of valuable micronutrients, including easily absorbed iron, zinc and B vitamins. Since sheep graze on green pastures, the fat in their meat is an excellent source of conjugated linoleic acid, which is heart-healthy and helps protect against cancer. It is available from March until February.
Usually made from cull ewes was once fashionable but has lost favour over the last twenty years and is now rarely found. We have mutton on request and usually towards the year’s end: September/October. Strong flavoured and tougher than lamb or hogget, it requires long slow cooking. Mutton should be ordered well in advance.
